    Prepare the Chicken

    Preheat your oven to 375°F (190°C). In a medium saucepan, boil the chicken breasts in salted water until cooked through, about 15-20 minutes. Remove the chicken, let it cool, and shred it using two forks.

    In a large mixing bowl, combine the shredded chicken, cream cheese, shredded cheddar cheese, chopped green onions, garlic powder, salt, and black pepper. Mix until well blended.

    Prepare the Sopapilla Dough

    If using store-bought sopapilla dough, roll it out according to package instructions. If making from scratch, prepare the dough by combining flour, baking powder, salt, and water, knead until smooth, and let rest for 30 minutes.

    Roll out the sopapilla dough into circles about 1/4 inch thick. Place a generous scoop of the chicken filling in the center of each circle. Fold the dough over the filling to create a half-moon shape and seal the edges by pressing with a fork.
