    Prepare the Peppers

    Roast the poblano peppers over an open flame or in a broiler until the skin is blistered and charred. Place them in a plastic bag or covered bowl for about 10 minutes to steam. Once cooled, peel off the skin, make a slit down the side, and remove the seeds.

    Cook the Filling

    In a skillet over medium heat, add a tablespoon of oil. Sauté the chopped onion until translucent. Add minced garlic and cook for an additional minute. If using ground beef, add it to the skillet, along with cumin, salt, and black pepper. Cook until browned. If using cheese, skip to the next step.

    Stuff the Peppers

    Fill each poblano pepper with the cooked meat mixture or shredded cheese, pressing down gently to pack the filling inside.

    Prepare the Batter

    In a bowl, beat the eggs until fluffy. Gradually add flour to the eggs, mixing until smooth. The batter should be thick enough to coat the peppers.

    Fry the Peppers

    Heat oil in a large skillet over medium-high heat. Dip each stuffed pepper into the batter, allowing excess to drip off, and carefully place in hot oil. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

    Place the rellenos on a serving plate and drizzle with warm tomato sauce. Serve hot, garnished with additional cheese if desired.
