    Prepare the Filling

    In a skillet over medium heat, add 2 tablespoons of olive oil. Once the oil is hot, add the chopped onion and sauté until translucent, about 5 minutes.

    Add Garlic and Beef or Cheese

    Stir in the minced garlic and cook for an additional minute. If using ground beef, add it to the skillet, breaking it up with a spoon. Season with salt and black pepper. Cook until the beef is browned and cooked through, about 7-10 minutes. If using shredded cheese, simply add it to the skillet and stir until melted.

    Prepare Tortillas

    In a separate pan, warm the corn tortillas over medium heat for about 30 seconds on each side, until they are pliable. This prevents them from cracking when rolled.

    Assemble Enchiladas

    Spread a spoonful of enchilada sauce on the bottom of a baking dish. Take a warm tortilla, add a generous amount of the filling to the center, roll it tightly, and place it seam-side down in the baking dish. Repeat with remaining tortillas and filling.

    Add Sauce and Cheese

    Once all enchiladas are placed in the dish, pour the remaining enchilada sauce over the top. Sprinkle the shredded cheddar cheese evenly over the sauce.

    Bake

    Preheat the oven to 180°C (350°F). Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.

    Serve

    Remove from the oven and let cool for a few minutes. Serve warm, garnished with sour cream and fresh cilantro.
