Cooking Instructions
- 1
Prepare the Beef Filling
In a large skillet over medium heat, add the ground beef and chopped onion. Cook until the beef is browned and the onion is translucent, about 5-7 minutes. Drain any excess fat.
- 2
- 3
Prepare the Tortillas
In a separate pan, lightly warm the corn tortillas over low heat for about 30 seconds on each side. This makes them pliable and easier to roll.
- 4
Assemble the Enchiladas
Take one tortilla and spoon about 2-3 tablespoons of the beef mixture onto the center. Sprinkle a tablespoon of shredded cheese and a sprinkle of chopped cilantro over the beef. Roll the tortilla tightly and place it seam-side down in a greased baking dish. Repeat with remaining tortillas.
- 5
Top with Sauce and Cheese
Once all enchiladas are in the dish, pour the enchilada sauce evenly over the top. Then, sprinkle the remaining shredded cheese over the sauce.
- 6
Bake
Preheat the oven to 350°F (175°C). Bake the enchiladas for 20-25 minutes or until the cheese is melted and bubbly.
- 7
Serve
Remove from the oven, garnish with additional chopped cilantro if desired, and serve hot with your favorite sides.
