    In a large skillet over medium heat, add the ground beef and chopped onion. Cook until the beef is browned and the onion is translucent, about 5-7 minutes. Drain any excess fat.

    Add garlic powder, cumin, salt, and black pepper to the beef mixture. Stir well to combine and cook for another 2 minutes to allow the flavors to meld.

    Prepare the Tortillas

    In a separate pan, lightly warm the corn tortillas over low heat for about 30 seconds on each side. This makes them pliable and easier to roll.

    Assemble the Enchiladas

    Take one tortilla and spoon about 2-3 tablespoons of the beef mixture onto the center. Sprinkle a tablespoon of shredded cheese and a sprinkle of chopped cilantro over the beef. Roll the tortilla tightly and place it seam-side down in a greased baking dish. Repeat with remaining tortillas.
