Roast the poblano peppers over an open flame or in the oven until the skin is charred. Place them in a plastic bag for about 10 minutes to steam, then peel the skin off carefully.

In a skillet over medium heat, add the ground beef, chopped onion, and minced garlic. Cook until the beef is browned and the onion is translucent. Stir in the chopped bell pepper, tomato sauce, cumin, salt, and pepper. Cook for an additional 5 minutes. Remove from heat and mix in the shredded cheddar cheese. Allow to cool slightly.

Stuff the Peppers
Once the poblano peppers are peeled, make a slit down the side of each pepper and remove the seeds. Carefully stuff each pepper with the beef and cheese filling.

In a mixing bowl, combine flour, baking powder, salt, and milk. Whisk until smooth. In a separate bowl, beat the eggs until frothy, then gently fold them into the batter.

Heat the vegetable oil in a large skillet over medium-high heat. Dip each stuffed pepper into the batter, allowing the excess to drip off, then carefully place them in the hot oil. Fry until golden brown, about 4-5 minutes on each side. Remove and place on paper towels to drain excess oil.
