Enchilada Filling

Method

Enchilada Assembly

  1. 1

    Prepare the Filling

In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain any excess fat.

  2. 2

Add the chopped onion and minced garlic to the skillet with the beef. Sauté until the onion is translucent, about 3-4 minutes.

  3. 3

Stir in chili powder, cumin, salt, and black pepper. Cook for an additional 2 minutes to combine the flavors.

  4. 4

Add the refried beans to the skillet and mix well. Remove from heat and set aside to cool slightly.

  5. 5

    Assemble the Enchiladas

Preheat your oven to 350°F (175°C).

  6. 6

In a separate shallow dish, pour some enchilada sauce to coat the bottom of a baking dish.

  7. 7

Take a tortilla and spoon some of the beef filling in the center, sprinkle with shredded cheese, then roll it up tightly and place seam-side down in the baking dish.

  8. 8

Repeat the process with remaining tortillas and filling, placing them snugly in the baking dish.

  9. 9

    Bake the Enchiladas

Once all enchiladas are assembled, pour the remaining enchilada sauce over the top and sprinkle with any leftover cheese.

  10. 10

Cover the dish with aluminum foil and bake for 20 minutes.

  11. 11

Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

  12. 12

    Serve

Let the enchiladas cool for a few minutes before serving. Enjoy with sour cream or guacamole if desired.
