Burger Preparation

    Prepare the Burger Patties

    In a bowl, form the La Frieda short rib/brisket blend into 4 equal patties. Season with salt and pepper. Grill the patties over medium-high heat for about 4-5 minutes per side, or until cooked to your desired doneness.

    Cook the Bacon

    In a skillet, cook the grilled slab bacon over medium heat until crispy. Set aside.

    Melt the Cheese

    During the last minute of cooking the burger patties, place a slice of Gruyere cheese on top of each patty and close the grill lid to melt the cheese.

    Assemble the Burger

    On the bottom half of each pretzel bun, spread the Dijon aioli. Add the burger patty with melted cheese, top with grilled bacon, and a generous amount of caramelized onions. Close with the top half of the pretzel bun.

Fries Preparation

    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into thick strips to form fries.

    Heat the Oil

    Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C).

    Fry the Potatoes

    Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels.

    Season the Fries

    Sprinkle the hot fries with salt to taste before serving.
