Prepare the Blueberry Compote

    Cook the Blueberries

    In a small saucepan, combine blueberries, sugar, and lemon juice. Cook over medium heat until the blueberries burst and the mixture thickens slightly, about 10-15 minutes. Set aside to cool.

Prepare the Stuffed French Toast

    Make the Filling

    In a bowl, mix the cream cheese and chocolate chips until well combined.

    Stuff the Bread

    Spread the cream cheese mixture on one side of each slice of challah. Top half of the slices with another slice to create sandwiches.

    In a separate bowl, whisk together eggs, milk, vanilla extract, and cinnamon.

    Cook the French Toast

    Heat butter in a skillet over medium heat. Dip each sandwich in the egg mixture, allowing excess to drip off. Cook each sandwich in the skillet until golden brown on both sides, about 3-4 minutes per side.
