Braised Leeks

    Prepare the Leeks

    Trim the roots and dark green tops from the leeks. Slice them in half lengthwise and rinse thoroughly under cold water to remove any grit.

    Braised Leeks Cooking

    In a skillet, melt the butter over medium heat. Add the leeks, salt, and pepper. Cook for about 5 minutes until slightly softened. Add the vegetable broth and simmer, covered, for 15-20 minutes until tender.

Prosciutto Horseradish Cream

    Make the Cream

    In a bowl, whisk together the heavy cream, prepared horseradish, chopped prosciutto, lemon juice, salt, and pepper until well combined. Set aside.

Seared Diver Scallops

    Prepare the Scallops

    Pat the diver scallops dry with paper towels and season with salt and pepper.

    Sear the Scallops

    In a skillet, heat the olive oil over high heat. Once hot, add the scallops and sear for about 2-3 minutes on each side until golden brown and cooked through. Do not overcrowd the pan.

    Plate the Dish

    On a plate, layer the braised leeks, top with the seared scallops, and drizzle with the prosciutto horseradish cream. Serve immediately.
