    Prepare the Peaches

    Cut the peaches in half and remove the pits. Brush the cut sides with olive oil and season with salt and pepper.

    Grill the Peaches

    Preheat a grill or grill pan over medium heat. Place the peach halves cut-side down on the grill and cook for about 4-5 minutes until grill marks appear and they are slightly softened. Flip and cook for an additional 2-3 minutes.

    Make Whipped Ricotta

    In a medium bowl, combine ricotta cheese, heavy cream, chopped fresh basil, salt, and pepper. Use a whisk or hand mixer to whip until smooth and creamy.

    Plate the Dish

    Once the peaches are grilled, place them on a serving plate. Top each peach half with a dollop of whipped ricotta and a slice of prosciutto. Drizzle with balsamic vinegar.
