    Preheat Oven

    Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

    Mix Dry Ingredients

    In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.

    Mix Wet Ingredients

    In a separate bowl, beat together sugar and eggs until light and fluffy. Add vanilla and olive oil, mixing well. Gradually stir in the dry ingredients, alternating with water, until smooth.

    Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool for 10 minutes in the pan before transferring to a wire rack.

Chantilly Cream

    In a mixing bowl, beat the heavy whipping cream with an electric mixer on medium speed until it starts to thicken. Gradually add powdered sugar and vanilla extract, then continue to beat until soft peaks form.

Sour Cherries

    Prepare Cherries

    In a saucepan, combine sour cherries, sugar, and water. Bring to a simmer and cook for about 10-15 minutes until cherries soften and sauce thickens slightly.
