    Prepare the Lobster

    In a bowl, combine the chopped lobster meat with salt and black pepper to taste. Set aside.

    Toast the English Muffins

    Toast the English muffins until golden brown. Spread butter on each half and place on serving plates.

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide it into the water. Poach the eggs for about 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon and set on a paper towel to drain.

    Assemble the Benedict

    On each toasted English muffin half, layer the lobster meat, followed by a poached egg. Drizzle the hollandaise sauce over the top.
