Method

Making Gnocchi

    Prepare the Potatoes

    Boil the potatoes until fork-tender, about 20 minutes. Drain and let cool slightly. Peel and mash the potatoes in a bowl.

    Make the Dough

    To the mashed potatoes, add the flour, chopped basil, egg, and salt. Mix until a dough forms. If it’s too sticky, add more flour as needed.

    Shape the Gnocchi

    Divide the dough into small portions and roll each into a rope about 1/2 inch thick. Cut into 1-inch pieces and press each piece with a fork to create ridges.

Cooking and Serving

    Cook the Gnocchi

    Bring a pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the baby carrots and cook for 5 minutes. Then add cherry tomatoes and corn, cooking until softened, about another 5 minutes.

    Combine and Serve

    Add the cooked gnocchi to the skillet with the vegetables. Toss gently to combine. Serve hot, topped with grated Parmesan and black pepper to taste.
