Preparing the dough

    Mix Dry Ingredients

    In a large bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until well mixed.

    Add Lard

    Add the lard or vegetable shortening to the flour mixture. Use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs.

    Incorporate Water

    Gradually add the warm water to the flour mixture, stirring until a dough forms. Knead the dough for about 5 minutes on a floured surface until smooth.

    Rest the Dough

    Cover the dough with a clean kitchen towel and let it rest for at least 30 minutes.

Frying the Sopapillas

    Roll Out the Dough

    After resting, roll out the dough on a floured surface to about 1/8 inch thickness. Cut the dough into triangles (about 3 inches per side).

    Heat Oil

    In a large, deep skillet, heat the vegetable oil over medium-high heat until hot (around 350°F or 175°C).

    Fry the Sopapillas

    Carefully add a few triangles of dough to the hot oil. Fry until they puff up and turn golden brown, about 1-2 minutes per side. Remove and drain on paper towels.

Serving

    Topping

    While the sopapillas are still warm, sprinkle them with a mixture of cinnamon and powdered sugar.

    Plate and Serve

    Serve the sopapillas warm with a drizzle of cajeta and a scoop of vanilla ice cream on the side.
