Making the Tortillas

    Mix the Dry Ingredients

    In a large mixing bowl, combine all-purpose flour and salt.

    Add Wet Ingredients

    Add water and vegetable oil to the dry ingredients. Mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 5 minutes until smooth.

    Rest the Dough

    Cover the dough with a damp cloth and let it rest for 30 minutes.

    Roll Out the Tortillas

    Divide the dough into 8 equal pieces. Roll each piece into a thin circle about 8 inches in diameter.

    Cook the Tortillas

    In a dry skillet over medium heat, cook each tortilla for about 1 minute on each side until lightly browned. Set aside.

Preparing the Filling

    Sauté Vegetables

    In a skillet, heat olive oil over medium heat. Add diced bell pepper and onion, cooking until softened, about 5 minutes.

    Combine Filling Ingredients

    In a bowl, combine the sautéed vegetables, shredded chicken, black pepper, and cumin. Mix well.

Assembling the Quesadillas

    Fill the Tortillas

    Place a tortilla in the skillet over medium heat. Sprinkle Muenster cheese on one half, followed by the filling mixture, and then top with more Muenster cheese.

    Fold and Cook

    Fold the tortilla in half and cook for about 2-3 minutes on each side until the cheese is melted and the tortilla is golden brown.

    Slice and Serve

    Remove from the skillet, slice into wedges, and serve hot with your choice of salsa or guacamole.
