Pancakes

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.

    Combine Wet Ingredients

    In a separate bowl, whisk together the milk, egg, vanilla extract, and guava puree until smooth.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to over-mix; a few lumps are okay.

    Cook Pancakes

    Heat a non-stick skillet or griddle over medium heat and melt 1 tablespoon of butter. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side. Repeat with remaining batter, adding more butter as needed.

Vanilla Whipped Cream

    Whip Cream

    In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using a hand mixer or stand mixer, beat on medium-high speed until soft peaks form.

Candied Pecans

    Toast Pecans

    In a skillet over medium heat, melt 1 tablespoon of butter. Add the pecans and sugar, stirring frequently until the sugar melts and coats the pecans, about 5 minutes. Add cinnamon and stir to combine. Remove from heat and let cool.

Guava Syrup

    Prepare Syrup

    In a small saucepan over medium heat, combine guava nectar and sugar. Stir until the sugar dissolves and the mixture slightly thickens, about 5 minutes. Remove from heat.
