Preparing the Taco Filling

Cook the Beef

In a large skillet over medium heat, add the ground beef. Cook until browned, about 5-7 minutes, breaking it apart with a spatula.

Add Seasoning

Stir in the taco seasoning, black beans, corn kernels, and chopped cilantro. Cook for an additional 3-5 minutes until heated through. Remove from heat and set aside.

Making the Enchilada Sauce

Sauté Onions and Garlic

In a saucepan over medium heat, heat the olive oil. Add the diced onion and cook until translucent, about 5 minutes. Then, add the minced garlic and sauté for another 1-2 minutes until fragrant.

Add Remaining Sauce Ingredients

Stir in the tomato sauce, chili powder, cumin, salt, pepper, and sugar. Simmer for 10-15 minutes, stirring occasionally until the sauce thickens. Remove from heat.

Assembling the Enchilada Tacos

Prepare the Tortillas

Warm the tortillas in a dry skillet or microwave until pliable.

Fill the Tacos

Spoon a generous amount of the taco filling onto each tortilla. Roll them up tightly and place them seam-side down in a baking dish.

Pour the enchilada sauce evenly over the rolled tacos, ensuring they are well covered.

Sprinkle shredded cheese over the top of the sauce.
