    In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat if necessary.

    Add chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.

    Stir in the black beans, corn, and taco seasoning. Cook for an additional 3-5 minutes until heated through. Remove from heat.

Enchilada Assembly

    Preheat Oven

    Preheat your oven to 350°F (175°C).

    In a separate pan, lightly warm the corn tortillas over medium heat for about 30 seconds on each side to make them pliable.
