Churro Dough Preparation

Add Flour
Once boiling, remove from heat and stir in the flour until a dough forms.

Incorporate Eggs
Let the dough cool for a few minutes, then add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until fully combined.
Bavarian Cream Filling Preparation

Heat Milk and Cream
In a saucepan, combine the milk and heavy cream over medium heat. Scrape the seeds from the vanilla bean into the mixture and add the pod as well.

Whisk Yolks and Sugar
In a separate bowl, whisk together the egg yolks, sugar, and cornstarch until well combined.

Cinnamon Sugar Preparation

Mix Sugar and Cinnamon
In a small bowl, mix together the granulated sugar and ground cinnamon. Set aside.
Frying the Churros

Heat Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Pipe the Dough
Transfer the churro dough to a piping bag fitted with a star tip. Pipe long strips of dough into the hot oil, cutting them to your desired length.

Fry Until Golden
Fry the churros until golden brown, about 2-3 minutes on each side. Remove them from the oil and drain on paper towels.

Fill Churros
Using a piping bag, fill each churro with the cooled Bavarian cream.

Serve the churros warm, drizzled with cajeta for dipping.
