Prepare the Sauces

    Choose Your Sauce

    Decide whether you want to use green salsa (salsa verde) or red salsa (salsa roja) for your chilaquiles. You can use both if you prefer a mix.

Prepare the Tortillas

    Cut and Fry Tortillas

    Cut the corn tortillas into quarters. In a large skillet, heat the vegetable oil over medium heat. Add the tortilla quarters in batches and fry until they are golden and crispy, about 2-3 minutes per side. Remove from the oil and place on paper towels to drain excess oil.

Combine and Serve

    Combine Tortillas and Sauce

    In the same skillet, reduce the heat to low, add the green or red sauce, and stir in the fried tortilla pieces until they are well coated. Cook just until heated through, about 2 minutes.

    Prepare the Eggs

    In a separate pan, cook the eggs to your liking (scrambled, sunny-side up, or poached).

    Assemble the Chilaquiles

    Serve the sauced tortillas on plates, top with the prepared eggs. Add sliced onions, chopped cilantro, sliced jalapenos, a drizzle of crema, and sprinkle with muenster cheese.
