Cut the pork belly into 1-inch cubes. Make sure to include the skin, as this is essential for crispy chicharrones.

In a large bowl, combine the pork belly cubes with salt, black pepper, and lime juice. Mix well to ensure that the seasoning is evenly distributed. Let it marinate for at least 30 minutes at room temperature.

In a large, deep pot, heat the vegetable oil over medium-high heat. Use enough oil to fully submerge the pork cubes.
