Cheese Enchiladas

Cheese Enchiladas

    Prepare the Tortillas

    Heat the vegetable oil in a skillet over medium heat. Lightly fry each corn tortilla for about 10-15 seconds on each side until pliable. Drain on paper towels.

    Assemble the Enchiladas

    Spread a little enchilada sauce on the bottom of a baking dish. Place a tablespoon of shredded cheese and some chopped onion in the center of each tortilla, roll them up, and place seam-side down in the baking dish.

    Bake

    Pour the remaining enchilada sauce over the rolled enchiladas and sprinkle with remaining cheese. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes until cheese is bubbly.

Taco al Carbón

    Marinate the Steak

    Rub the flank or skirt steak with taco seasoning, ensuring it's evenly coated. Let it marinate for at least 30 minutes.

    Grill the Steak

    Preheat the grill to medium-high heat. Grill the marinated steak for about 5-7 minutes on each side for medium-rare, or adjust the time to your preferred doneness.

    Prepare the Tacos

    Let the steak rest for a few minutes, then slice it thinly against the grain. Serve in warmed corn tortillas topped with chopped cilantro, diced onions, and a squeeze of lime.

Mexican Rice

    Sauté the Ingredients

    In a saucepan, heat vegetable oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.

    Cook the Rice

    Add the rice to the saucepan, stirring to coat with oil. Toast the rice for about 2 minutes, then add diced tomatoes and chicken broth. Bring to a boil.

    Simmer

    Reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked and liquid is absorbed. Fluff with a fork before serving.

Refried Beans

    Prepare the Beans

    In a skillet, heat vegetable oil over medium heat. Add chopped onion and minced garlic, cooking until softened.

    Mash and Cook

    Add canned pinto beans (including liquid) to the skillet. Mash the beans with a fork or potato masher and cook until heated through and thickened, about 10 minutes.

    Season with salt to taste and serve warm as a side dish.
