Fry the Potatoes

Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick.

Soak the Potatoes
Place the cut potatoes in a large bowl of cold water and soak for at least 30 minutes. This helps remove excess starch and makes for crispier fries.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

Heat the Oil
In a large, deep pot or a deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature.

Fry the Potatoes
Carefully add the dried potato strips in batches to the hot oil. Fry for 4-5 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Season with salt immediately.

While the fries are still hot, drizzle the truffle oil over the fries and sprinkle the grated Parmesan cheese generously over the top.

Finely chop the fresh parsley and sprinkle it over the fries along with freshly cracked black pepper to taste.

Serve the truffle Parmesan fries immediately while hot and crispy. Enjoy!
