Pork Ribeye

Cornbread & Honey Butter

Pork Ribeye

    Prepare the Glaze

    In a bowl, mix BBQ sauce, honey, apple cider vinegar, garlic powder, onion powder, and smoked paprika until well combined.

    Season the Pork

    Season both sides of the pork ribeye steaks with salt and black pepper.

    Sear the Steaks

    Heat olive oil in a skillet over medium-high heat. Sear the pork ribeye steaks for about 4-5 minutes on each side until they are browned.

    Glaze the Pork

    Brush the glaze mixture generously over the steaks in the last minute of cooking to caramelize the glaze.

    Rest the Steaks

    Remove the steaks from the skillet and let them rest for 5 minutes before serving.

Potato Salad

    Cook the Potatoes

    Place the cubed potatoes in a pot of salted water and boil until tender, about 15-20 minutes. Drain and cool.

    Mix the Salad

    In a large bowl, combine the cooled potatoes, mayonnaise, Dijon mustard, celery, red onion, salt, black pepper, and chives. Stir until well combined.

    Refrigerate the potato salad for at least 30 minutes before serving to let the flavors meld.

    Sprinkle paprika over the salad just before serving for added color.

Green Beans

    In a pot of boiling water, blanch the green beans for 3-4 minutes until bright green.

    Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute.

    Add the blanched green beans to the skillet, season with salt and black pepper, and sauté for another 5-7 minutes until tender.

Cornbread & Honey Butter

    In a bowl, combine cornmeal, all-purpose flour, sugar, baking powder, and salt.

    In another bowl, whisk together milk, egg, and melted butter until smooth.

    Pour the wet ingredients into the dry ingredients and stir until just combined.

    Bake the Cornbread

    Pour the batter into a greased baking dish and bake at 400°F (200°C) for 20-25 minutes until golden brown.

    Make the Honey Butter

    In a small bowl, mix softened butter with honey until smooth. Serve with warm cornbread.
