Beef Tenderloin

Sear the Beef
Once the oil is hot, sear the beef tenderloin for 2-3 minutes on each side until browned.

Roast the Beef
Transfer the skillet to the preheated oven and roast for 10-12 minutes for medium-rare. Remove from the oven and let it rest for 5 minutes before slicing.

Potato Purée

Cook the Potatoes
Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain well.

Make the Purée
In a mixing bowl, add the drained potatoes, butter, heavy cream, and salt. Mash until smooth and creamy. Adjust seasoning to taste.
Porcini Compound Butter

Prepare the Porcini
Rehydrate dried porcini mushrooms in warm water for about 20 minutes. Drain and chop finely.

Brussels Sprouts

Prepare Brussels Sprouts
Trim the ends off the Brussels sprouts and cut them in half. Toss with olive oil, salt, and black pepper.

Roast Brussels Sprouts
Spread Brussels sprouts on a baking sheet and roast in the oven at 400°F (200°C) for 20-25 minutes, or until crispy and golden.
