Pasta Preparation

    Cook the Fettuccine

    In a large pot, bring salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente, usually around 8-10 minutes. Drain and set aside.

Vegetable Preparation

    Grill the Portobello Mushrooms

    Preheat a grill or grill pan over medium-high heat. Brush the portobello mushrooms with olive oil and season with salt and black pepper. Grill for 5-7 minutes on each side until tender. Remove from grill and slice.

    Prepare the Artichokes

    If using canned or jarred artichoke hearts, drain and rinse them. If using fresh artichokes, steam them until tender and then slice.

    Chop the Tomato

    Dice the large tomato and set aside.

Assembly

    Combine Ingredients

    In a large mixing bowl, combine the cooked fettuccine, grilled portobello slices, artichoke hearts, diced tomato, marinara sauce, and pesto. Toss gently until all ingredients are evenly coated.

    Add Mozzarella

    Tear the fresh mozzarella into bite-sized pieces and gently fold into the pasta mixture.

Serving

    Serve the Dish

    Plate the fettuccine mixture and drizzle with additional pesto if desired. Garnish with fresh herbs if available and serve warm.
