Prepare the Calamari

Clean and Dry the Calamari
Rinse the calamari rings under cold water, then pat them dry with paper towels to remove excess moisture.

Mix the Flour and Cornstarch
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

Dredge the Calamari
Add the calamari rings to the flour mixture, ensuring they are evenly coated. Shake off any excess flour.
Fry the Calamari

In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Carefully add the coated calamari rings to the hot oil in batches, frying for 2-3 minutes or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Make the Voodoo Cocktail Sauce

In a small bowl, mix together the ketchup, horseradish, Worcestershire sauce, lemon juice, and hot sauce until well combined.

In another small bowl, combine the mayonnaise, minced garlic, lemon juice, and salt. Stir until smooth and creamy.
