Prep the Ingredients

Preheat your oven to 400°F (200°C). Slice the jalapeños in half lengthwise and remove the seeds. Cut the tops off the garlic bulbs to expose the cloves.

Roast the Garlic

Place the garlic bulbs on a baking sheet, drizzle with olive oil, and sprinkle with salt. Roast in the preheated oven for about 30-35 minutes or until the cloves are soft.

Roast the Jalapeños

On the same baking sheet, place the halved jalapeños cut-side up. Drizzle with olive oil, and sprinkle with salt and black pepper. Roast in the oven for 20-25 minutes until they are tender and slightly charred.

Cook the Bacon

While the garlic and jalapeños roast, cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and crumble into small pieces.

Assemble the Dish

Once the garlic is roasted, squeeze the soft cloves out of their skins into a bowl. Mix in the crumbled bacon and shredded pepperjack cheese.

Stuff the Jalapeños

Fill each roasted jalapeño half with the garlic, bacon, and cheese mixture.

Final Bake

Return the stuffed jalapeños to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
