Prepare the Pork

Season the pork shoulder with salt, pepper, and minced garlic. In a large pot, heat olive oil over medium-high heat. Sear the pork on all sides until browned, about 5-7 minutes.

Braised Onions

Remove the pork and set aside. In the same pot, add sliced onions and cook until softened. Stir in Dijon mustard and return the pork to the pot. Add enough water to cover the pork, cover, and simmer on low heat for about 2 hours or until the pork is tender.

Fried Pancetta

In a skillet, cook the diced pancetta over medium heat until crispy. Remove and drain on paper towels.

Assembly

Once the pork is cooked, shred it using two forks. In a serving dish, layer the shredded pork, top with fried pancetta, sprinkle shredded white cheddar, and drizzle with chipotle mayo. Serve hot.
