Method
Red Velvet Cake Layer
Preheat the Oven
Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
Combine Dry Ingredients
In a large bowl, sift together the flour, sugar, cocoa powder, baking soda, and salt.
Mix Wet Ingredients
In another bowl, whisk together the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar until well combined.
Combine Mixtures
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
Bake the Cake
Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
Cheesecake Layer
Prepare the Springform Pan
Wrap the outside of a 9-inch springform pan with aluminum foil to prevent leaks.
Mix Cream Cheese
In a large bowl, beat the cream cheese until smooth. Gradually add the sugar and mix until well combined.
Add Remaining Ingredients
Add sour cream, vanilla extract, eggs, and cornstarch, mixing until smooth and creamy.
Assemble Layers
Pour half of the cheesecake batter into the prepared springform pan. Place one of the cooled red velvet cake layers on top, then pour the remaining cheesecake batter over it.
Bake the Cheesecake
Bake in a water bath at 325°F (160°C) for 60-70 minutes, or until the center is set. Allow to cool, then refrigerate for at least 4 hours or overnight.
Buttercream Topping
Prepare Buttercream
In a mixing bowl, beat the unsalted butter until creamy. Gradually add the powdered sugar and mix until smooth.
Add Cream and Vanilla
Add the heavy cream and vanilla extract to the buttercream and mix until well combined and fluffy.
White Chocolate Curls
Create Curls
Melt the white chocolate in a double boiler or microwave. Once melted, spread it thinly on a parchment paper and let it cool. Once set, scrape with a spatula to create curls.
