Cook Pasta

Boil Water
In a large pot, bring 4 quarts of water to a boil. Add 1 tablespoon of salt to the boiling water.

Cook Pasta
Add 8 oz of pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes. Once cooked, drain and set aside.
Sauté Vegetables

Heat Olive Oil
In a large skillet, heat 3 tablespoons of olive oil over medium heat.

Add Garlic
Add 2 minced garlic cloves to the skillet and sauté for about 1 minute until fragrant.

Add Vegetables
Add the sliced bell pepper, zucchini, carrot, and halved cherry tomatoes to the skillet. Sauté for about 5-7 minutes until the vegetables are tender.

Add Spinach
Stir in 2 cups of fresh spinach and cook until wilted, about 2 minutes.
Prepare Sauce

Make Sauce
Pour in 1 cup of vegetable broth and 2 tablespoons of lemon juice into the skillet. Season with 1 teaspoon of black pepper. Stir well to combine and let simmer for 3-4 minutes.
Combine and Serve

Combine Pasta and Sauce
Add the cooked pasta to the skillet with the vegetables and sauce. Toss well to coat the pasta evenly.

Serve
Serve immediately, topped with 1 cup of grated Parmesan cheese. Enjoy your Pasta Primavera!
