Roasting the Hazelnuts

Preheat your oven to 350°F (175°C). Spread the hazelnuts evenly on a baking sheet and roast them for about 10-12 minutes, or until they are golden brown and fragrant. Be sure to stir them halfway through to ensure even roasting.

Infusing the Flavor

Once the hazelnuts are roasted, let them cool slightly. Place the warm hazelnuts in a large jar, and pour the grain alcohol over them. Seal the jar tightly and let it sit in a cool, dark place for at least 2 weeks, shaking it gently every few days to help infuse the flavors.

Preparing the Syrup

After 2 weeks, combine the water and granulated sugar in a saucepan over medium heat. Stir until the sugar is fully dissolved. Remove from heat and let it cool to room temperature.

Once the syrup has cooled, strain the hazelnut-infused alcohol through a fine mesh sieve or cheesecloth into a clean jar, discarding the solids. Add the cooled syrup to the jar and stir well to combine.
