Pasta Preparation

Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs. Use a fork to gradually incorporate the flour into the eggs until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Roll Out the Pasta
After resting, divide the dough into quarters. Roll out each piece using a pasta machine or a rolling pin until thin. Cut into fettuccine strips.
Alfredo Sauce Preparation

Prepare the Sauce
In a large saucepan over medium heat, melt the unsalted butter. Add minced garlic and sauté for about 1 minute until fragrant.

Add Cream and Cheese
Pour in the heavy cream and bring to a gentle simmer. Gradually whisk in the grated Parmesan cheese until melted and smooth.

Season the Sauce
Add nutmeg, salt, and black pepper to taste. Stir well and remove from heat.
Cooking the Pasta and Combining

Cook the Pasta
Bring a large pot of salted water to a boil. Add the freshly made fettuccine and cook for 2-3 minutes or until al dente. Drain the pasta, reserving 1/2 cup of the pasta water.

Combine Pasta and Sauce
In the saucepan with the Alfredo sauce, add the drained fettuccine. Toss to combine, adding reserved pasta water as needed to achieve desired sauce consistency.

Serve immediately, garnished with additional Parmesan cheese and black pepper if desired.
