Clean the Clams
Rinse the little neck clams under cold water to remove any sand or grit. Scrub the shells gently with a brush if necessary.

Prepare Ingredients
Finely chop the onion, red bell pepper, and garlic. Set aside.

Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Remove the bacon, crumble it, and set aside. Reserve 1 tablespoon of bacon grease in the skillet.

Sauté Vegetables
In the same skillet with the reserved bacon grease, add the chopped onion, red bell pepper, and garlic. Sauté for about 5 minutes until the vegetables are soft and fragrant.

Add Wine and Seasoning
Pour in the white wine and add salt, black pepper, and paprika. Let it simmer for about 2-3 minutes until slightly reduced.

Combine Ingredients
Stir in the crumbled bacon and remove the skillet from heat.

Preheat Oven
Preheat your oven to 400°F (200°C).

Fill the Clams
Place the cleaned clams on a baking sheet. Spoon the vegetable and bacon mixture evenly over each clam.

Drizzle with E.V.O.O.
Drizzle the tops of the clams with extra virgin olive oil.

Place the baking sheet in the preheated oven and bake for about 10-12 minutes, until the clams are cooked through and the tops are golden.
