Calamari Preparation

Clean and Cut the Calamari
Rinse the calamari under cold water. Remove the skin and innards, then cut the body into rings and leave the tentacles whole.

Prepare the Coating
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and garlic powder until well combined.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Coat the Calamari
Dredge the calamari rings and tentacles in the flour mixture until fully coated, shaking off any excess.

Fry the Calamari
Carefully place the coated calamari into the hot oil in batches, frying for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Seasonings
Pour in the crushed tomatoes, reducing the heat to low. Add the oregano, salt, black pepper, and sugar. Stir to combine.

Simmer the Sauce
Let the sauce simmer for about 15-20 minutes, stirring occasionally, until thickened. Add the chopped basil just before serving.
