Preparation
Preheat Oven
Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish or line it with parchment paper.
Prepare the Filling
In a mixing bowl, combine fresh blueberries, lemon juice, granulated sugar, and cornstarch. Gently toss to coat the blueberries and set aside.
Making the Base
Mix Dry Ingredients
In a large bowl, whisk together all-purpose flour, granulated sugar, baking powder, and salt.
Combine Mixtures
Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.
Assembling and Baking
Layer the Base
Spread half of the batter into the prepared baking dish, smoothing it out evenly.
Add Filling
Spoon the blueberry filling evenly over the batter.
Top with Remaining Batter
Dollop the remaining batter over the blueberries. It’s okay if some blueberries are still visible.
Prepare Topping
In a small bowl, mix together brown sugar, cinnamon, and cold cubed butter until crumbly. Sprinkle the mixture evenly over the top.
Bake
Bake in the preheated oven for 35-40 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
Serving
Cool and Serve
Allow to cool for at least 10 minutes before slicing. Serve warm or at room temperature.
