Chai-spiced grenadine (if not store-bought)

To make 1 cup quick chai grenadine: heat 1 cup pomegranate juice with 1 cup sugar until dissolved, add 1 cinnamon stick, 3 green cardamom pods (crushed), 3 whole cloves, 1 small star anise and 1/2 tsp ground ginger; simmer 5 minutes, cool, strain and refrigerate. Use 1/2 oz for this cocktail.

If using a rim, mix 1 tablespoon superfine sugar with a pinch of ground cinnamon and a tiny pinch of ground cardamom on a small plate.

Build & Shake

If rimming, wet the glass edge with a lime wedge and dip into the chai-spiced sugar; set glass aside.

Fill a cocktail shaker half full with ice.

Add 2 oz Cara Cara orange–infused tequila to the shaker.

Add 0.75 oz Clementino clementine liqueur to the shaker.

Add 0.5 oz chai-spiced grenadine to the shaker.

Add 1.5 oz fresh pineapple juice and 0.5 oz fresh lime juice to the shaker.

Cap the shaker and shake vigorously for 12–15 seconds, until the outside of the shaker is well chilled and slightly frosted.

Strain & Finish

Fill a chilled coupe or rocks glass with one large ice cube (or leave empty for up to the bar).

Double-strain the cocktail into the prepared glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any solids.

Garnish with a Cara Cara orange wheel or a thin twist expressed over the drink, and tuck a dehydrated pineapple wheel or small pineapple leaf on the rim.

Serve immediately.
