Base spirit & sweetener

Method

Prepare sugar syrup

  1. 1

    Make simple syrup

In a small saucepan combine 1 cup granulated sugar and 1 cup filtered water. Heat gently over medium heat, stirring occasionally, until sugar is fully dissolved and the mixture is clear. Do not boil. Remove from heat and cool to room temperature (about 15–20 minutes).

Infuse spirit

  1. 2

    Combine flavor with spirit

Place 1 cup neutral spirit in a clean, airtight glass jar (1–1.5 quart). Add the chosen primary flavor: the citrus peel (2 tablespoons) and any optional whole spices (1 tablespoon) and split vanilla bean (1/2 tablespoon) if using. Submerge the ingredients in the spirit.

  2. 3

    Steep

Seal the jar and store it at room temperature away from direct sunlight. Steep for 48–72 hours, tasting every 12–24 hours. Citrus peel will infuse quickly — remove when flavor is at desired intensity (typically 48 hours) to avoid bitterness. Spices/vanilla can remain for the full time if you want more depth.

  3. 4

    Strain

When infusion reaches desired flavor, strain the spirit through a fine mesh sieve lined with cheesecloth or a coffee filter into a clean container to remove peels and spices. Discard solids.

Sweeten & balance

  1. 5

    Blend syrup and spirit

Add the cooled simple syrup (1 cup) to the infused spirit and stir to combine. Taste for sweetness and strength.

  2. 6

    Adjust acidity and complexity

Add 2 teaspoons fresh lemon juice to brighten the flavor. If you want more depth or rounded sweetness, stir in 1 teaspoon honey or maple syrup until dissolved. Taste and adjust: add more syrup for sweetness (in small increments) or a few drops of lemon for brightness.

Clarify & rest (optional)

  1. 7

    Optional resting

For a smoother, more integrated liqueur, bottle the mixture and let it rest in a cool, dark place for 1–2 weeks, shaking gently every few days. This helps flavors meld and any fine particles settle.

  2. 8

    Optional filtration

If the liqueur appears cloudy, filter it through a coffee filter or fine muslin into the final bottle to clarify.

Bottle & serve

  1. 9

    Finish

Transfer the finished liqueur to a clean glass bottle with a tight cap. Label with flavor and date. Store in a cool, dark place; will keep several months to a year depending on ingredients (longer if high alcohol and no fresh dairy). Serve chilled or at room temperature in cocktails or as a sip liqueur.
