Main Batter

Method

Main Batter

  1. 1

    Preheat Oven & Prepare Pan

Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment paper, leaving a 1-inch overhang to lift the loaf out after baking.

  2. 2

    Combine Dry Ingredients

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and fine salt until evenly combined and aerated.

  3. 3

    Combine Wet Ingredients

In a separate medium bowl, whisk the whole milk with the eggs, melted butter, and vanilla extract until smooth and homogenous.

  4. 4

    Make the Batter

Pour the wet ingredients into the dry ingredients. Use a rubber spatula to fold the mixture together until just combined — a few small streaks of flour are okay. Do not overmix to keep the loaf tender.

Add-ins / Finish

  1. 5

    Add Chocolate

Fold the dark chocolate chips (or chopped bittersweet chocolate) into the batter until evenly distributed. Scrape the batter into the prepared loaf pan and smooth the top with an offset spatula or the back of a spoon.

  2. 6

    Bake

Bake in the preheated oven for 50–65 minutes, or until the top is golden brown and a toothpick inserted into the center comes out with a few moist crumbs (not wet batter). Rotate the pan halfway through baking if your oven heats unevenly.

  3. 7

    Cool & Finish

Remove the pan from the oven and let the loaf cool on a wire rack for 10–15 minutes. Use the parchment overhang to lift the loaf from the pan and transfer it to the rack. Sprinkle the top with coarse sea salt if desired. Allow to cool at least 30 minutes before slicing to set the crumb.
