    Prepare the Potatoes

    Peel the Russet potatoes and cut them into even strips, about 1/4 inch thick. Rinse the cut fries under cold water to remove excess starch, then dry them thoroughly with a kitchen towel.

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the correct temperature for frying.

Frying

    Fry the Potatoes

    Carefully add the dried potato strips to the hot oil in batches, being careful not to overcrowd the pot. Fry for about 4-5 minutes or until they are golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

Seasoning

    Season the Fries

    While the fries are still hot, sprinkle them with salt and black pepper for the traditional seasoning. For rosemary and garlic fries, toss them with chopped rosemary and garlic powder. For Cajun fries, toss them with Cajun seasoning. Adjust the seasoning to taste.
