    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into fries, about 1/4 inch thick.

    Soak the Fries

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

    Fry the Potatoes

    Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully add the fries in batches and fry until golden brown, about 5-6 minutes. Remove and drain on paper towels. Season with salt.

    Add Toppings

    In a large serving dish, layer the fries. Top with crumbled bacon, shredded cheddar cheese, and chopped green onions.

    Serve

    Serve immediately while hot and cheese is melted.
