Cut Sweet Potatoes
Wash and peel the sweet potatoes. Cut them into large fries, about 1/2 inch thick.

Soak the Fries
Soak the cut sweet potato fries in cold water for at least 30 minutes to remove excess starch. Drain and pat dry with paper towels.

Heat Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Sweet Potatoes
Carefully add a batch of sweet potato fries to the hot oil. Fry for about 5-7 minutes or until they are golden brown and crispy. Remove and drain on paper towels.

Season the Fries
While the fries are still hot, sprinkle them with salt, paprika, garlic powder, and black pepper to taste.

Serve hot with a selection of dipping sauces of your choice.
