Dry the Potatoes
After soaking, drain the potatoes and pat them dry with a clean kitchen towel or paper towels.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes (First Fry)
Carefully add the dried potato strips to the hot oil in batches. Fry for about 4-5 minutes until they are soft but not browned. Remove and drain on paper towels.

Fry the Potatoes (Second Fry)
Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for an additional 3-4 minutes or until they are golden brown and crispy. Remove and drain on paper towels.

Season the Fries
While the fries are still hot, season them with your choice of seasoning: sprinkle with salt and pepper, rosemary and garlic, or Cajun seasoning to taste.
