Prepare the Slaw
In a large bowl, combine shredded purple cabbage and grated carrot. Toss with a pinch of salt and set aside to marinate for about 10 minutes.

Make Gochujang Mayo
In a small bowl, mix together mayonnaise and gochujang until well combined. Set aside.

Cook the Burgers
Form ground beef into 4 patties and season with salt and pepper. Heat a grill or frying pan over medium-high heat and cook patties for about 4-5 minutes on each side, or until cooked to your desired doneness.

Assemble the Burgers
On the bottom half of each Kaiser roll, layer a burger patty, followed by a generous spoonful of kimchi, a portion of purple slaw, a fried egg, hot pickles, and crushed potato chips. Top with sliced green onions and the top half of the roll.

Serve
Serve immediately with extra potato chips on the side, if desired.
