Prepare the Tomatoes
Peel and chop the tomatoes. If using canned tomatoes, drain excess liquid.

Simmer
Bring the mixture to a boil over medium heat, then reduce the heat and let it simmer for about 30 minutes, stirring occasionally.

Blend
Once the mixture has thickened, remove from heat and let it cool slightly. Then blend until smooth using an immersion blender or a regular blender.

Strain (Optional)
If you prefer a smoother texture, strain the ketchup through a fine mesh sieve to remove any solids.

Transfer the ketchup to a clean jar or bottle and store in the refrigerator. Use within two weeks.
