Melt the Chocolate
Chop the dark chocolate into small pieces and melt it gently in a heatproof bowl over a pot of simmering water (double boiler) until smooth. Remove from heat and let it cool slightly.

Separate the Eggs
Separate the egg yolks from the egg whites. Place the yolks in a mixing bowl and the whites in a separate bowl.

Mix Egg Yolks and Sugar
Add granulated sugar to the egg yolks and whisk until the mixture is pale and creamy. Stir in the melted chocolate and vanilla extract until well combined.

Whip Egg Whites
Using an electric mixer, beat the egg whites until stiff peaks form. Gently fold the whipped egg whites into the chocolate mixture to maintain the airy texture.

Whip the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until fully incorporated.

Chill the Mousse
Spoon the mousse into serving dishes or glasses. Cover and refrigerate for at least 2 hours, or until set.

Before serving, top the chocolate mousse with additional whipped cream if desired.
