Prepare the Pimento Cheese
If you haven't prepared the pimento cheese yet, mix together cream cheese, shredded cheddar cheese, diced pimentos, mayonnaise, and seasonings in a bowl until creamy and well combined.

Fry the Eggs
In a skillet, melt 1 tablespoon of butter over medium heat. Crack the eggs into the skillet, sprinkle with salt and pepper, and cook until the whites are set but the yolks are still runny, about 3-4 minutes. Remove from heat.

Toast the Kaiser Rolls
In the same skillet, add the remaining tablespoon of butter and toast the cut sides of the Kaiser rolls until golden brown.

Assemble the Burger
Spread a generous amount of pimento cheese on the bottom half of each toasted Kaiser roll. Top with a lettuce leaf, sliced pickles, and a fried egg. Finally, sprinkle crushed potato chips on top before placing the top half of the roll.
