Short Ribs

    Prepare the Beef

    Season the beef short ribs with salt and black pepper on all sides.

    Sear the Ribs

    In a large skillet over medium-high heat, heat the olive oil. Add the short ribs and sear them on all sides until browned, about 4-5 minutes per side. Remove the ribs and set aside.

    Sauté the Vegetables

    In the same skillet, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened. Add the minced garlic and cook for an additional minute.

    Deglaze the Pan

    Pour in the red wine, scraping the bottom of the pan to release any browned bits. Let it simmer for about 2-3 minutes.

    Combine Ingredients in Slow Cooker

    Transfer the vegetable and wine mixture to a slow cooker. Place the seared short ribs on top, add the beef broth, bay leaves, and dried thyme.

    Slow Cook

    Cover and cook on low for 8 hours or until the meat is tender and falling off the bone.

Mashed Potatoes

    Boil the Potatoes

    In a large pot, add the peeled and cubed potatoes. Cover with water and bring to a boil. Cook for 15-20 minutes or until the potatoes are tender.

    Drain and Mash

    Drain the potatoes and return them to the pot. Add the butter, milk, salt, and black pepper. Mash until smooth and creamy.

Serve

    Plate the Dish

    Serve the tender short ribs over a generous scoop of mashed potatoes. Spoon some of the sauce from the slow cooker over the top for extra flavor.
