Preparation of Ingredients

    Cook Potatoes

    Place the potatoes in a pot of salted water, bring to a boil, and cook for about 15-20 minutes or until fork-tender. Drain and let cool before cutting them into wedges.

    Blanch Green Beans

    Trim the ends of the green beans and blanch them in boiling water for 2-3 minutes. Transfer them to an ice bath immediately to stop the cooking process. Drain and set aside.

    Prepare Dressing

    In a small bowl, whisk together balsamic vinegar, olive oil, chopped fresh herbs, salt, and black pepper until well combined.

    Sear Tuna

    Heat a skillet over high heat. Season the tuna steaks with salt and pepper. Sear the tuna for about 1-2 minutes on each side for rare doneness. Remove from heat and let rest before slicing.

    Poach Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide them into the water. Poach for about 3-4 minutes, or until the whites are set but the yolks are still runny. Remove with a slotted spoon and drain on paper towels.

    Compose the Salad

    On a large platter, arrange the mixed salad greens as a base. Top with blanched green beans, potato wedges, sliced tuna, halved cherry tomatoes, and poached eggs. Drizzle the balsamic herb dressing over the salad.
