Pork Marinade

    Prepare the Marinade

    In a mixing bowl, combine soy sauce, honey, minced garlic, minced ginger, and black pepper to create the marinade.

    Marinate the Pork

    Add the pork tenderloin to the marinade, ensuring it is well coated. Cover and refrigerate for at least 30 minutes, or overnight for more flavor.

Cooking the Pork

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Pork

    Remove the pork from the marinade and grill for about 6-8 minutes on each side, or until fully cooked (internal temperature should reach 145°F). Let it rest for 5 minutes before slicing.

Spring Roll Assembly

    Prepare the Vegetables and Herbs

    While the pork is resting, gather your lettuce leaves, julienned cucumber, mint leaves, pickled daikon, and pickled carrots.

    Soften Rice Paper Wrappers

    Fill a shallow dish with warm water. Dip each rice paper wrapper into the water for a few seconds until soft and pliable. Lay it flat on a clean surface.

    Assemble the Spring Rolls

    On the lower third of the rice paper, place a lettuce leaf, a few slices of grilled pork, some cucumber, mint leaves, and a small amount of pickled daikon and carrots. Fold the sides over the filling and roll tightly from the bottom up.

    Repeat

    Continue the process until all ingredients are used up. Serve the spring rolls fresh with your choice of dipping sauce.
